This is a nice and quick salad. I have presented it here as a 3.16 to 1 ratio for 298 calories. It will easily convert up to a higher ratio and still retain its flavour.This lovely recipe has come from one of my favourite blogs, 101cookbooks.com .
90g of Lebanese Cucumber
15g of raw lemon
15g of Macadamia oil or extra virgin cold pressed olive oil
46g of Avocado oil
2g of coriander
22g of snow peas, sliced
4g of pine nuts
19g of firm tofu
24g of raw carrot
Dice the carrot, cucumber and tofu. Combine the carrot, cucumber, avocado, pine nuts, lemon, snow peas and coriander into the bowl you will serve the meal in. Add in 12 grams of oil. With the remaining 3 grams of oil lightly brown the tofu. Scrape out the oil and tofu into the bowl. Season with a pinch of sea salt.
This salad may suit an older child of 4 and up. I gave this to Caspian and he was taken aback initially, then he has quite happily eaten it several times. For increased sweetness consider cooking the carrots. For those on a lower ratio I added maple syrup! of course more vegetable would also be a great option.
