Caspian absolutely loved this simple soup, hooray! It is a 3.25 to 1 ratio for 300 calories ( as always please check this calculation at home yourself).
25 g of corn kernals ( I used frozen kernals)
8g Chicken thigh, cooked
14g macadamia nuts
17g chicken fat or coconut oil
1g of Hilde Hemmes powdered broth
I made this very quickly in my Thermomix this evening. I cooked the corn with 200ml of water, the chicken, broth, and fat for 7 min on speed 2 at 100 degrees. I then added the macadamia nuts and blitzed it for 30 seconds speed 10, it was very smooth.
Alternatively place all the ingredients into a saucepan and lightly boil for 5 minutes. Transfer it over to a food processor and add in the macadamia nuts and blend until very smooth. I had trouble with too much liquid for this recipe, please experiment with the water quantities, and vary it according to your child’s taste.
The chicken I used was from a whole, free range chicken I cooked in a slow cooker (crockpot). The fat from the chicken hardened over night in the fridge and i scooped it off and used it in the soup. The things we do for a “cure”!
