This is a very simple meal that can be a breakfast, morning tea ,lunch or afternoon tea. It is a 4:1 ratio for 298 Calories. The nuts and chocolate can be weighed and bundled together the night before for an easier start to the day.
12 grams of macadamia nuts
9 grams of pecans
4 grams of almonds
10 grams of soy cream
21 grams of avocado
3 grams of mayonnaise
6 grams of 85% Lindtz chocolate
Serve the nuts and chocolate together. Mix the cream with some water to thin it out to a milk consistency. Combine the avocado and mayonnaise together to make it nice and creamy. This type of meal can have many variations, with bacon or ham, cheese, other milks or creams and alternate nuts. I love the speed at which this meal can be served, 5 min and it is on the table.
This morning I woke up before 6 am, both my boys were still asleep so I thought I would get a start on making Caspian’s breakfast. Cas has continued his strike this week and it has been another rather trying and emotional week, with quite a few early mornings where I was lying in bed worrying about what to feed him. I have had a week of giving him what I view as seriously revolting and not nutritious food. I felt at peace with this simple meal, it was the first time I had presented it to him since he had gone up to the 4:1 ratio. I made it in a flash so I thought I would take some snaps before Caspian awoke and ate it.
What followed next was a comedy of errors. He was so desperate to eat he managed to spill his milk within a minute of sitting at the table. It was such a lovely puddle I thought I may as well photograph it as well.
He is such a fiercely independent little person, but his fine and gross motor skills (to say nothing of his balance) have not been able to support him in his endeavors to feed himself, get dressed, climb the stairs etc.. this seems to be changing. In the last few weeks he has become very steady on his feet and he is opening small containers he couldn’t have a few months ago. Slowly and quietly this diet is changing him.
