It is amazing what a little help can achieve. A fairy godmother in the form of a food tech & chef visited me this week.This is Danielle’s mayonnaise. With grace and easy she a got the handle on the specs of this crazy diet and started throwing out ideas for dishes (stay tuned). It is so wonderful to share the load with someone so knowledgeable. I have found the last few months hard, especially when I knew I needed help and didn’t know how to get it or where/who to ask.I have taken on the burden of making every meal for Caspian from scratch and not asking my dear capable husband to help.

It has the same amount of fat as my regular mayonnaise, about 82% with almost no carbohydrates. Even better, it is made with love and great (organic) ingredients. The flavour is easy to vary, for older tastes try adding chilli, horseradish or garlic infused oils. Dani’s mayonnaise was whipped up with wholegrain mustard.
250 g of chosen oil ( olive oil the nicest choice)
2 g lemon
1 egg, raw
