This is a variation on the biscuits that are found in the ketocook and on ketocook.com. These are a snowy version made with macadamias and shredded coconut.
I have called them Caspian’s kisses as he began kissing me repeatedly as I was making them. This is a really new behaviour which has taken our family by storm, a very openly affectionate happy little boy is beginning to emerge.As a family we have struggled since late December 2009 with Caspian having profound sleep issues. I also suspect that Cas has been in constant daily pain with headaches for the last 3 ½ years. Now, it is lifting. Last week he kissed David a hundred times and just turned over and feel asleep. A miracle. These are little biscuitty kisses, working their miracle on our little man.
11g of Shredded Coconut ( Macro )
15g of Raw egg
12g Macadamia nuts
1g Coconut oil
Blitz the coconut and macadamias together to get a paste- powder, set aside. Combine the egg and nuttlex ( DF margarine) and the coconut oil. Mix the dry and wet ingredients together . I then add a little amount of vanilla seeds less than a 0.1 g or you can add a drop of extract if you wish. Combine the dry and wet ingredients together. The mixture can then be prepared in two different ways. One quick option is to smear it onto baking paper and throw it into the oven at 180 degrees for 10 minutes. The second option is to roll it in glad wrap and put into the freezer for 30 minutes. Once it is stiff you can roll it out between two pieces of baking paper and use a cookie cutter to make fabulous shapes. Remember,any remaining little bits must be joined together and baked to complete the meal.
