I love this custard! This very simple yummy recipe is all thanks to About Life in Rozelle. I stumbled across their Vegan custard this week and fell in love with it. My husband scoffed the sample I came home with, it is really delicious.It is a 5 minute job (rare in the ketogenic world) once you have worked it out in your calculator. For my non ketogenic friends simply leave out the added fat! let me know what you think.
This recipe is for 308 Calories at 4:1 ratio with 23g of protein. To lower the ratio simply drop the added fat, I used MCT oil. Please remember to run this via your dietitian and calculate it specific to your child’s needs.
30g of Silken Tofu , I used organic Earth Source
40g of Coconut Cream, I used Woolworths Select as it is about 31% fat
1.5g of organic Panela sugar. feel free to use maple syrup or agave.
16g of MCT oil
Vanilla seeds .
I used just the little I could scrape out of the pods. The values are so low I didn’t bother adding it to the calculator. If you use vanilla extract please make sure you calculate for it. BLEND, ‘it !!!! Isn’t that fabulous? Obviously serving it cold is best, Bon Appetit.
