This more of an eggy idea rather than a recipe. I worked out that Caspian can have almost a whole egg now. We recently changed to 4 meals a day and one bedtime snack. Caspian’s meals are now BIG. 372 calories at a 4:1 ratio, for 23 g of protein. It is amazing how a change in size makes recipes so much more worthwhile. 6g of bread is worth it, rather than 3 grams for example. What follows is a ketogenic style breakfast, made so that Caspian can join in with the rest of the family.
Lightly boil an egg. Two minutes in rapidly boiling water and pull it out. Add your ketokids choice of fat, in this case it is mayonnaise. Then add with a tiny amout of GF bread and nuttlex (a DF margarine… butter is better of course). A syringe of oil to top it off to reach to ratio requirements.
How do I weigh the egg? I chop off the top and weigh the exact amount of egg still in its shell. Set the top aside. I allow Caspian to eat his breakfast then I weigh the empty egg shell.. and scoop out of the top I chopped off earlier the last part of the egg to make up for the weight of the shell.
An example:Cas needs 41 grams of egg.
41 gram of boiled egg including shell – 8 grams shell. Top up with 8 grams of egg at the end.
