I said I was unlikely to post anything about food. Oops.
In the quest for a sugarless cake I found this fabulous Banana Bread. It was light, fluffy, grain free, nutritious and no child had a meltdown or seizure afterwards!
When a full bottle of maple syrup disappeared a few months back- and Caspian had a very bad run of seizures- we decided we should ban “sugar” for Caspian- and ultimately the whole house. ( you are wondering how after 2 years of Keto Caspian could even be eating it??- shhh). I love baking!! I managed to make many things without a sweetener like pancakes but cakes are tough. I can’t manage sugar all that well anymore either. I do love that terrible temptress, Dark Chocolate. Paleo sweet recipes are delicious and sugar free but are too much coconut, chocolate and almonds. A combo of these is meltdown city for the other young man in the family and asthma for Caspian.
To double check I went through the list of all natural sweeteners to see what they are made of. All the regular fella’s are made of sucrose. This includes coconut sugar, maple syrup and the brown fancy sugars. Rice syrup is made up of mostly maltose and honey is part fructose and part glucose. Agave is fructose.
The Glycemic Index (GI) is how quickly a food causes a blood sugar rise. Sucrose has a GI index of 65. Glucose is 100. Maltose is 105! Read up on sweeteners here. Supposedly coconut sugar has a GI of only 35- most likely related to the fibre slowing things down. Initially I was considering just chucking all the table sugars and keeping the honey (GI 55)…. but now I realise it is not really a matter of GI at all- but quantities of free floating sugars, worse, sugar is not a great brain fuel. Fructose should be devoured with fibre. Thats sweet enough for me.
